Usually it's the fat content...boil it up in a bit of water..let it stand and get cold..you can lift the fat off and see what you have got left. I prefer to buy some stewing steak and mince it myself in the food processor..you know what you are getting and it has less risk of bacteria if it is cooked straight away.
You have no idea what the supermarket butcher throws into the mincer..! nostrils, tails, ears and toggies...nothing wrong with eating all the animal, but if l am eating a dead corpse, l like to know which bits l am eating.
