I think it's a myth that it used to be green. Apparently they originally used caramel to give it its dark brown colour.

Dispite the rumour that Coke was originally green, it never was! The same color as it is today...maybe even darker. It was made this color to hide the impurities left in the drink by the primitive refinery process of caramel at that time. To this day, Coca-Cola uses, as an ingredient, a non-narcotic coca leaf extract prepared at a Stepan Company plant in Maywood, New Jersey. In the United States, Stepan Company is the only manufacturing plant authorized by the US Federal Government to import and process the coca plant.
